Garlic and Herb Chicken With Bruschetta Topping Recipe

Light and healthy, plus this tasty bruschetta topping is also great on grilled fish.


Garlic and Herb Chicken

Bruschetta Topping

  • 4 plum tomatoes, seeded and chopped
  • 3 clove garlic, finely chopped
  • 2 tbsp finely chopped fresh basil
  • 3 tbsp balsamic vinaigrette
  • 2 tbsp shredded Parmesan cheese


  1. Combine marinade mix and lemon juice in a resealable plastic bag; mix well. Add chicken, turning to coat. Seal bag, marinate in refrigerator 30 minutes.
  2. Combine all bruschetta ingredients and mix well. Refrigerate until ready to serve. The bruschetta can be made a day ahead.
  3. Remove chicken from marinade; discard remaining marinade. Grill chicken over medium direct heat for 12 to 16 minutes, turning once, until chicken is cooked through.
  4. Serve chicken with bruschetta topping.
